Grilled Chicken Kebabs

Every few weeks, new research appears showing yet another health benefit from herbs and spices. Several studies, for example, have demonstrated that the spice coriander, derived from the herb cilantro, is an effective anti-anxiety agent. So these chicken kebabs make a delicious dinner on stressful days when you need a reliable mood-changer. Best of all, you can prepare everything in the morning and allow it to marinate until you’re ready to make dinner.
Ingredients
- 4 boneless, skinless chicken breasts, chopped into bite-size pieces
- 1 tablespoon fresh lemon zest
- ¼ cup lemon juice
- 1 ½ cups dry white wine
- ¼ cup extra virgin olive oil
- 2 large sweet onions, peeled and quartered
- 2 tablespoons whole coriander seeds
- 3 cloves garlic, peeled and crushed
- 2 tablespoons fresh ginger, grated
- 1 large red pepper, cored and cut into chunks
- 2 zucchini, sliced in ½” thick slices
- 6 ounces small brown mushrooms
Directions
- Combine all ingredients in a large bowl, mix thoroughly, so all pieces of chicken and vegetables are coated.
- Cover bowl and place in the refrigerator until you are ready to cook.
- Heat broiler or grill. Drain vegetables and chicken, and dispose of marinade.
- If you are using wooden skewers, cover each skewer in a light coating of olive oil. Then alternate skewering pieces of chicken with chunks of onion, slices of zucchini, chunks of red pepper, and mushrooms.
- Broil or grill, turning frequently, until chicken is thoroughly cooked (15 to 20 minutes). You may need to baste with olive oil occasionally.
- Serve with a side dish of brown rice or quinoa.
